THE ROLE:
As an Assistant Smokehouse Operator, you will support the daily operations of the smokehouse department at a well-established meat production facility in Hamilton, ON. This is a temp-to-perm opportunity for candidates looking to build experience in food manufacturing and production operations.
In this role, you will assist with sanitation and cleaning of smokehouse equipment, washing racks and carts, and maintaining a clean and organized production environment. You will also support the smokehouse cooking process by helping load and unload product, monitor cooking cycles, and ensure production specifications are followed.
Additionally, you will be responsible for completing production documentation and basic computer data entry to maintain accurate food safety and production records. This position plays an important role in ensuring products meet food safety standards and are produced efficiently.
*This is a hands-on role in a fast-paced food manufacturing environment and is ideal for candidates who are reliable, detail-oriented, and comfortable working in production settings.*

RESPONSIBILITIES:
- Wash and sanitize smokehouse buggies, racks, screens, sticks, carts, and utensils following sanitation procedures.
- Clean and sanitize smokehouse equipment, floors, drains, and surrounding work areas.
- Safely handle and store sanitation chemicals in accordance with WHMIS guidelines.
- Assist with loading and unloading products into smokehouses safely and efficiently.
- Support smokehouse cook and smoke programs according to product specifications.
- Monitor production conditions including time, temperature, humidity, and smoke levels.
- Respond to alarms or process issues and report concerns to supervisors or quality assurance staff.
- Complete production records such as cook logs, sanitation records, and batch documentation.
- Perform computer-based data entry and record keeping for smokehouse operations.
- Follow all HACCP, GMP, and food safety procedures.
- Maintain a clean, organized, and safe work environment.
- Report food safety or quality concerns immediately.
- Perform basic equipment checks and report maintenance issues when identified.
- Assist with additional production duties as required.
REQUIREMENTS:
- Previous experience in a production, manufacturing, or food processing environment preferred.
- Ability to follow written procedures and production specifications.
- Basic computer skills for production documentation and data entry.
- Strong attention to detail and ability to follow food safety procedures.
- Comfortable working in a production environment that may include heat, steam, and cleaning chemicals.
- Ability to stand for extended periods and perform repetitive tasks.
- Capable of pushing, pulling, and maneuvering heavy racks and carts.
- Strong work ethic, reliability, and positive attitude.
- Good communication and teamwork skills.
